The ingredients of “Life Extension Spring Rolls” are based on the principles
of the Five Elements, harmonizing the balance of the forces yin and yang.
The five elements in our environment are wood, fire, earth, metal and water.
The ingredients of the Spring roll  uses the essence of the five elements. Each
essence possesses its own color and is matched to specific ingredients:
green (herbs, mints lettuce and green onion), red (carrot), yellow (egg), white
(jicama), and black (Mushrooms). These ingredients relate to the
corresponding internal organs: liver, heart, spleen, lung and kidneys.

Ingredients:
- Jicama.
- Carrots.
- Fried Tofu.
- Eggs.
- Vermicelli,
- Mushrooms.
- Lettuce, herbs, mint (fresh basil leaves)
- Green onions, butter, chopped nuts, spring roll wrappers.

Preparation:
Beat eggs in a large bowl. Heat frying pan, apply a light thin coat of butter; then
pour a thin layer of eggs in the pan to make crepes; flip over if needed. Lay the
crepe flat on a cutting board, continue making crepes until all the egg batter is
used then cut them into pieces.
Slice mushroom to thin pieces. Cut green onion in small pieces.  Stir fry onion
in a little butter, and then add mushrooms, stir for few minutes, place into a
container and let cool. Slice fried tofu in thin pieces. Boil vermicelli until soft but
not mush; set aside. Shred Jicama and carrots steam to cook.

Sauce: Mix ½  cup of water, 2tsp Sucarnat in 5Tbs Hoisin sauce and hot red
pepper for dipping.

To roll:
Moisten spring roll wrapper with a little warm water, place on plate.
Layers of some lettuces, mints, and herb.
Add a tablespoon each of eggs, tofu, and mushroom, chopped nut,  Jicama
and carrot. Place vermicelli on top. Fold 2 sides of wrapper in, then roll tightly
from inside out to complete.
Dip in mixture of Hoisin sauce and hot red pepper sauce.
